FOOD UNIT LEADER (FDUL)

The Food Unit Leader (FDUL) determines food and water requirements, plans menus, orders food, provides cooking facilities, cooks, serves, and maintains food service areas, and manages food safety and security concerns.

(1) Review Common Responsibilities.

(2) Obtain a briefing from the Logistics Section Chief (LSC).

(3) Participate in Logistics Section planning activities.

(4) Obtain information on the locations of work assignments, along with the number and location of personnel to be fed.

(5) Determine method of feeding to best fit each situation.

(6) Obtain necessary equipment and supplies to operate food service facilities.

(7) Set up Food Unit equipment.

(8) Prepare menus to ensure incident personnel receive well-balanced meals.

(9) Make sufficient potable water available to meet incident needs.

(10) Adopt the appropriate health and safety measures.

(11) Supervise cooks and other Food Unit personnel.

(12) Keep inventory of food on-hand and receive food orders.

(13) Provide the Supply Unit with food supply orders.

(14) Submit reports to the Logistics Section Chief (LSC).
